Gluten-Free, Dairy-Free, and Sugar-Free Hot Cocoa

One of my favorite winter treats is hot cocoa, but the thought of drinking hot cocoa from a packet doesn't sound appealing. So, I wanted to create a gluten-free, dairy-free, and sugar-free version that I could share with my kids. What follows is the recipe I've perfected over the last couple of years. In this recipe, you can use any type of milk. While there is quite a bit of added fat, it's what makes the cocoa so creamy and delicious your kids won't even know it's dairy-free. My secret to making it so creaming is using MCT oil, which stands for Medium Chain Triglycerides. They have many benefits including being easily and rapidly absorbed by the body to be used for fuel instead of stored as fat. So, you don't have to worry about this hot cocoa packing on any pounds.

Another benefit of using MCT oil is that it treats candida fungal overgrowth in the gut!

I've chosen to balance the bitter of the unsweetened cocoa powder with with liquid Stevia Leaf extract, so there's no added sugar or artificial sugars! While I'm not a fan of Stevia in all recipes, it works really well to sweeten hot cocoa.

Here's my Sugar-Free Hot Cocoa Recipe:

3 cups coconut milk (or any type of milk) 2 TBS. unsweetened cocoa powder 1/4 tsp. turmeric 2 TBS. MCT Oil 1/2 tsp. chocolate extract (you can use vanilla if you don't have chocolate) 60 - 90 drops of Stevia Leaf extract (to taste) Optional: cinnamon lightly sprinkled on top In a sauce pan, whisk together all the ingredients. Once it's hot enough, use a hand blender to emulsify the fat and create a nice foam on the top and serve. Enjoy!
